It’s that time again – time for another Cookbook Giveaway! I am so, so excited about this month’s healthy slow cooker cookbook I can hardly stand it!
I received my giveaway copy of Clean Eating, Slow Cooking the other day and I am already in love! I’m sure you will be, too. There are so many good recipes in here! I’ll be digging in later this week and testing some out myself and I’ll let you guys know my thoughts over on Facebook.

Guys, I am LOVING this cookbook, and I’m so excited for this cookbook giveaway!
I only bought it a few weeks ago but we’ve eaten three recipes from it so far and they have all been fabulous.
The best recipe for far has been the Chicken Tetrazzini on Page 164. Guys, this meal is on POINT. Dairy-free and made with coconut milk, thickened with arrowroot, my kids gobbled it right up. Even my picky three-year-old. She even ate the wilted spinach I added in at the end!

If meal planning is the backbone of a well-run kitchen, then make-ahead freezer meals are the “muscles” that surround that backbone.
That analogy feels weird but I’m gonna go with it anyway.
Think about it: Part of the reason you feel like you never have time to cook is likely because of two things:
- You have nothing to eat in the house (“It’s all ingredients and no FOOD!”)
- You have about 15 minutes to get food on the table but in that time you also have to start a load of laundry, sign permission slips, respond to that work email, and break up a sibling fight. Standing at the counter and chopping ingredients is not something you have two available hands for.
That’s where freezer meals come in! You pull out a meal from the freezer (sometimes you don’t even have to defrost it first!) and boom- a hot dinner is on the table in around 30 minutes, often less, and you didn’t have to bust out a takeout menu to get it there.
That’s why I’ve fallen in love with this awesome book, “Not Your Mother’s Freezer and Make Ahead Meal Cookbook”, by Jessica Fisher of GoodCheapEats.com. Her site is fabulous for finding fast, simple, budget-friendly meals that families will love, and this cookbook continues on from her website. It even breaks it down with planning schedules so you can grocery shop and freezer cook the hell out of your monthly meal rotation.
I love that so many of the meals in this book are vegetarian, since I’m always on the lookout for tasty options that don’t include meat – we’re big meat eaters, so if I find a recipe that’s so good we don’t miss the meat, it’s a huge bonus in my eyes. I also love that many recipes are geared towards a full family flavor profile; not too many spices, simple instructions, and many recipes could easily be followed by kids, helping to get little ones in the kitchen. I mean seriously, check out these Chickpea and Tahini Patties, which are my favorite recipe so far (and my kids loved them!)
She also includes a host of handy tips, such as things to remember when you’re freezing meals, and tricks to help get your batch cooking done quickly, usually in a matter of hours. Because what good is batch freezer cooking if it takes you a whole dang day to get it done?
