Spiced Vanilla Pear Sparkler -
Spiced Vanillia and Peark Sparkler cocktail has notes of cinnamon, cardamom and cloves with sweet pear and vanilla. Top it off with vodka and ginger ale!
Spiced Vanilla Pear Sparkler

This delicious cocktail has notes of cinnamon, cardamom and cloves against the sweet pear and vanilla. Top it off with vodka and ginger ale for a fabulous winter cocktail! 

Servings: 4 drinks

Spiced Vanilla Pear Syrup
  • 1 whole pear stem removed and roughly diced, Bartlett or Bosc
  • 1/2 cup brown sugar
  • 2 tablespoons vanilla extract
  • 5-6 cardamom pods
  • 1/4 teaspoon ground nutmeg
  • 2 cinnamon sticks
  • 1/2 teaspoon whole cloves
  • 2 cup water
  • 2 ounces vodka
  • 3 tablespoons pear syrup
  • ginger ale
to make the Spiced Vanilla Pear Syrup
  1. Combine pears, brown sugar and vanilla over medium heat. Cook, stirring often, until the pears have started to soften and the sugar has dissolved, about 3-4 minutes. 

    Add the remaining ingredients, cover and bring to a boil. 

    Uncover and reduce heat to low. Let the syrup simmer 20-25 minutes until it has reduced by 1/2. 

    Remove from heat and strain. Set the syrup aside to cool before mixing the drink.

to make the cocktail
  1. Combine vodka and syrup in a glass over plenty of ice. Top with ginger ale.

Recipe Notes

In testing I only used Bosc and Bartlett pears that were pretty fresh (and not too soft), so that's what I recommend here. You don't have to worry about peeling or de-seeding the pears before dicing, since they'll get strained at the end.
