This delicious cocktail has notes of cinnamon, cardamom and cloves against the sweet pear and vanilla. Top it off with vodka and ginger ale for a fabulous winter cocktail!
- 1 whole pear stem removed and roughly diced, Bartlett or Bosc
- 1/2 cup brown sugar
- 2 tablespoons vanilla extract
- 5-6 cardamom pods
- 1/4 teaspoon ground nutmeg
- 2 cinnamon sticks
- 1/2 teaspoon whole cloves
- 2 cup water
- 2 ounces vodka
- 3 tablespoons pear syrup
- ginger ale
Combine pears, brown sugar and vanilla over medium heat. Cook, stirring often, until the pears have started to soften and the sugar has dissolved, about 3-4 minutes.
Add the remaining ingredients, cover and bring to a boil.
Uncover and reduce heat to low. Let the syrup simmer 20-25 minutes until it has reduced by 1/2.
Remove from heat and strain. Set the syrup aside to cool before mixing the drink.
Combine vodka and syrup in a glass over plenty of ice. Top with ginger ale.
In testing I only used Bosc and Bartlett pears that were pretty fresh (and not too soft), so that's what I recommend here. You don't have to worry about peeling or de-seeding the pears before dicing, since they'll get strained at the end.
