Equipment

  • 1 Instant Pot
  • 1 7 QT Slow Cooker
  • 1 Large Saute Pan

Ingredients
  

  • 16 ounces elbow macaroni
  • 2 teaspoons olive oil
  • 1 yellow onion diced
  • 1 cup corn kernels
  • 1 lb ground beef
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 14 ounce canned diced tomatoes with green chiles
  • To serve: optional
  • Sour cream
  • avocado
  • Hot sauce

Instructions
 

Prep Ahead:

  • Heat a large pot of salted water until boiling and cook the elbow macaroni until tender, then drain and set aside.
  • Chop the onions and add to a resealable bag or container, along with the corn, beef, and spices.

Prepare From Prepped:

    Instant Pot Instructions:

    • Add the bag of onions, corn, ground beef, and spices to the Instant Pot.
    • Top with dry elbow macaroni.
    • Cook on High Pressure for 5 minutes with a Quick Pressure release.
    • Remove lid and stir to combine.
    • Serve with desired toppings.

    Slow Cooker Instructions:

    • Add the bag of onions, corn, ground beef, and spices to the slow Cooker.
    • Top with dry elbow macaroni.
    • Secure the lid and cook on low for 4 hours, high for 2.
    • Remove lid and stir to combine.
    • Serve with desired toppings.

    Stovetop Instructions:

    • Add the contents of the resealable bag or container to a large saute pan over medium heat, using a spoon to break up the beef as it cooks.
    • Add the canned tomatoes and cooked elbow macaroni, and stir to combine.

    Make From Fresh:

    • Add the ingredients to the Instant Pot in layers:
    • Canned tomatoes, onions, corn, and spices on the bottom
    • Ground beef in the middle
    • Dry elbow macaroni on top
    • Cook on High Pressure for 5 minutes with a Quick Pressure release.
    • Remove lid and stir to combine.
    • Serve with desired toppings.

    Slow Cooker Instructions

    • Add the ingredients to the Slow Cooker in layers:
    • Canned tomatoes, onions, corn, and spices on the bottom
    • Ground beef in the middle
    • Dry elbow macaroni on top
    • Secure the lid and cook on low for 4 hours, high for 2.
    • Remove lid and stir to combine.
    • Serve with desired toppings.

    Stovetop Instructions

    • Heat a large pot of salted water until boiling and cook the elbow macaroni until tender, then drain and set aside.
    • Heat the oil over medium heat in a large, wide pan, until shimmering. Add the onions and cook, stirring occasionally, until soft. Add the corn, beef, spices and cook, stirring frequently, until the beef has cooked through.
    • Stir in the canned tomatoes and macaroni until combined, then serve with your choice of toppings.

    Notes

    Kids love this easy weeknight dish! Combine ground beef, corn, Tex-mex seasonings, and serve with your favorite chili-style toppings like sour cream, avocado, and hot sauce. The Instant Pot and slow cooker instructions include cooking the macaroni from dry, which makes this an even easier recipe for busy parents.
