Preheat your oven 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine broccoli or green beans with olive oil, minced garlic, salt, and pepper. Toss until everything is well-coated.
Spread the vegetables in a single layer on the baking sheet—don’t overcrowd, or they’ll steam instead of crisp.
Roast for 20–25 minutes, flipping once halfway, until tender and edges are browned.
Remove from oven and immediately add a squeeze of fresh lemon juice for brightness, or a dusting of parmesan if you’re feeling fancy. Serve warm.
