Tortellini and Sausage Soup in a Jar

bouillon cube

sweet Italian sausage
casing removed

canned diced fire-roasted tomatoes

frozen mini cheese tortellini

fresh baby spinach
Zest and juice of one lemon
or ¼ cup lemon juice
Salt and pepper

Instructions
Prep Ahead:
Bring a salted pot of water to boil and add the tortellini in.
Cook the tortellini for 5 minutes, until just before they’re fully cooked. Remove and drain.
While the tortellini is boiling, cook and crumble the Italian sausage. Set aside to cool.
Layer the jars like so, beginning with the bottom:
Bouillon cube
Italian sausage
Canned tomatoes
Tortellini
Spinach
Lemon zest and juice
Screw the lids on the jars and store until ready to eat.
Prepare From Prepped:
When ready to eat, pour boiling water into the jar, until all ingredients are covered.
Screw on the lid and let the soup “cook” for 10-12 minutes
Unscrew the lid and give the soup a god stir, combining the ingredients.
Pour into a bowl and enjoy!
