Feta and Garlic Stewed Spinach
This deliciously creamy, salty, and flavorful stewed spinach recipe is made with feta and garlic and as a bonus, freezes great!

- 2 tablespoons olive oil
- 6 ounces frozen chopped spinach thawed
- 3 garlic clove minced
- ¼ cup grated parmesan cheese
- ½ cup chicken or vegetable broth
- ½ cup crumbled feta

Prep Ahead:
Cook the ingredients according to the instructions.
When cool enough to handle, transfer to resealable bag or container.
Cooked ingredients will last for up to 4 days in the fridge, and up to 3 months in the freezer.
Make From Fresh:
Heat the oil in a large saucepan over medium heat until shimmering.
Add the spinach, garlic, parmesan cheese and stir to combine, then add the broth.
Place a tight-fitting lid on the pan and reduce the heat to low. Simmer 5-8 minutes until the garlic has softened and the spinach is fragrant.
Remove the pan from the heat and stir in the crumbled feta. Serve warm.
