Feta and Garlic Stewed Spinach

This deliciously creamy, salty, and flavorful stewed spinach recipe is made with feta and garlic and as a bonus, freezes great!

Ingredients

  • 2 tablespoons olive oil
  • 6 ounces frozen chopped spinach thawed
  • 3 garlic clove minced
  • ¼ cup grated parmesan cheese
  • ½ cup chicken or vegetable broth
  • ½ cup crumbled feta

Instructions

Prep Ahead:

  • Cook the ingredients according to the instructions.
  • When cool enough to handle, transfer to resealable bag or container.
  • Cooked ingredients will last for up to 4 days in the fridge, and up to 3 months in the freezer.

Prepare From Prepped:

  • Thaw as necessary, then reheat gently over the stove or in the microwave in batches of 30 seconds, stirring in between.

Make From Fresh:

  • Heat the oil in a large saucepan over medium heat until shimmering.
  • Add the spinach, garlic, parmesan cheese and stir to combine, then add the broth.
  • Place a tight-fitting lid on the pan and reduce the heat to low. Simmer 5-8 minutes until the garlic has softened and the spinach is fragrant.
  • Remove the pan from the heat and stir in the crumbled feta. Serve warm.
